Chicken Corn Soup
A famous Pennsylvania German staple served at auctions, fundraisers, and sales
- 4-5 pound stewing chicken
- Pinch of saffron
- 1 stalk celery
- Noodles
- 6 ears of fresh corn on the cob
- 2 small onions
- 1 tablespoon finely chopped parsley
- Salt and pepper to taste
Wash the chicken and remove excess fat. Place in a large kettle and cover completely with water. Add some salt and a pinch of saffron. Boil for about 1 to 1.5 hours until chicken is soft. While the chicken is boiling, chop vegetables and cut corn from the cob. Remove the chicken from the broth and let cool. Discard the skin. Cut chicken into small pieces and set aside. Add chopped vegetables to broth and cook for 10 minutes. Add cooked noodles to the broth. Boil 20 to 30 minutes. Add pepper, chicken and parsley. (It may be necessary to add more water as the soup is cooking.) Serves about six.
